Per pound / 6 piece package of chicken thighs (rough measurements)
Marinade:
2 tblspn olive oil
Salt+pepper well
1.5-2 tblspn garlic powder
1.5-2 tblspn onion powder
1 5-2 tblspn smoked paprika
(If you have some dried rosemary or thyme, can give an optional good sprinkle)
Marinade for minimum 30min/hour
Preheat oven to 400
Cast iron in high, sear chicken well on both sides (probably like at least 4 minutes per side), turn off stove and let rest briefly to reduce splatter in oven
Skin side down, put cast iron into oven for roughly 25-30 minutes. Flip every 10 minutes. You can kinda extend this out to 40 minutes depending on how much chicken
Let rest, enjoy. Don't let the fond/pan juices go to waste, good to saute some veggies or throw rice in there
